Kale Anyone???


Every since I became a Vegan (or semi vegan) about a year ago I wanted to find a delicious way to cook kale. Kale is known to have some sort of super powerful antioxidant properties. This leafy green is very high in beta carotene, vitamin k, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium.It sounded like a good deal to me so I picked up a bunch (1 buck!)from the Organic Supermarket near my house and tried this delicious recipe. Changed parts of it and created this zingy pesto.This recipe makes a plentiful amount so you can freeze it and use it another day (the frost enhances the kales sweet flavors). Add to Whole Wheat Pasta, Vegan pizza or Sourdough bread for a vergan tasty treat.

The Anti-Basil Kale Vegan Pesto

  • One bunch fresh kale (local and organic if you can. Support your local farmers!)
  • 1/2 cup of almonds (you can use pretty much any nut or even a mixture of many)
  • 1/4-1/2 Cup Extra virgin olive oil
  • 6 cloves fresh garlic
  • Juice of 1/2 lemon
  • Salt and freshly ground black pepper

And a food processor with chopping blade attachment.
Directions:
1. Start with a pile of fresh, washed kale that has been stripped from the stems.

2. Peel and trim 4-6 cloves of garlic.
3. Chop the almonds until it is of small bits consistency. (i ain't no julia childs so this will do)
4. Add 1/4 Cup of extra-virgin olive oil, garlic and lemon juice (if using) and process again. (Watch the consistency because you don't want it to thin.)
5. Blanch: Toss kale into 2 quarts of salted water that has reached a boil. Continue cooking until water returns to boiling and kale has softened a bit.
6. Remove Kale from the water and rinse with cold water. Put in a Colander and squeeze the water out of the kale leaving it fairly dry.
7. Process once more until it looks like pesto, adding more olive oil for consistency, and salt and pepper to taste.


And voila! You have just created some mega vitamin packed spectacular kale pesto! This one goes out there to all those skeptical carnivores that think vegan food is bland. TAKE THAT ANIMAL MURDERER!!!!
